Kombucha Culture

Known as the immune system drink, Kombucha tea is economical and easy to make at home.
It is loaded with natural probiotics, is a great tonic, marinade and congestion buster!!

It is made from sugar, tea leaves, water and a Kombucha Culture also known as a SCOBY, which stands for a Symbiotic Colony of Yeast & Bacteria.

In the photo above, the SCOBY floats in a bath of sweet tea, (made from the water, tea leaves and sugar). The SCOBY feeds on the sugar and puts probiotics and enzymes into the sweet tea, which is known as fermentation. As the bacteria and yeast multiply, the sweet tea ferments from very sweet to sweet & sour to very sour and finally to vinegar.

It takes about 2 weeks from the liquid to go from sweet tea to vinegar, although in warmer weather it can ferment much more rapidly. The tea is at its peak, sweet & sour and full of probitiocs and enzymes, about midway in the cycle. It can then be drunk as a tonic in small amounts.

Later in the cycle when it is more vinegary, it can be used in marinades and congestion buster mixtures. At the end of the cycle, it can be used in place of vinegar in salad dressings and other recipes.

It is also remarkable for bee stings, cooling the inflamed area and minimizing the itch and pain.

Kombucha Tea is traditionally made with Black or Green Tea which I cannot tolerate. My cultures have only been brewed with non-caffeinated organic herbs from my organic garden.
