Bread mixes include all dry ingredients including starter cultures. The process involves four 5-minute steps spread out over 24 hours. All you do is add water and oil.
The finished product is a fully fermented flatbread made of high quality, whole grain Teff flour plus organic flavorings. The taste is full-bodied and complex and the texture is spongy yet substantial.
Bread Mix Ingredients:
Simple Full Sour: Unsprayed Teff Flour, organic chia seed, starter cultures (teff flour and water), kosher salt
Simple Mild Sour: Unsprayed Teff Flour, organic chia seed, starter cultures (teff flour and water), kosher salt, gf baking soda
Pumpernickel Full Sour: Unsprayed Teff Flour, organic chia seed, starter cultures (teff flour and water), organic caraway seed, organic carob powder, kosher salt
Pumpernickel Mild Sour: Unsprayed Teff Flour, organic chia seed, starter cultures (teff flour and water), organic caraway seed, organic carob powder, kosher salt, gf baking soda
The full sour mixes have the complex flavor associated with authentic sourdough. The mild sour mixes have a bit of baking soda in them which neutralizes the sour taste.
Mixes are assembled in my dedicated gluten-free facility and are free of gluten, dairy, eggs, soy, commercial yeast, starch flours, peanuts, and gums.

I just had to let you know that I LOVE the way the Pumpernickel Sourdough Flat Bread turned out! I was leery of making it thinking that I would flub it up somehow but it is really pretty easy and tastes delicious...just like pumpernickel!
I put the aluminum foil on top of the bread while it was baking but took it off near the end. I loved the crunchiness of the outside and the softness of the inside. I used an 8 by 8 pan because I didn't have the size you spoke of in one of your videos.
It's a winner in my book! It was also a fun experience watching the different stages of the fermentation process.

We made the Simple Flatbread-Mild Sour for Thanksgiving and it was fantastic! I ate quite a bit of it just by itself. My mom really liked it toasted with butter, and my dad made a sandwich with it, as well.
We tried the mild bread mix first and liked that it wasn't overly sour. The directions were really easy to follow, and we didn't have any problems with the process. We can't wait to try the others!
